The cupcakes of yesterday were generic and made for the masses, specifically kids. Today the phenomenon of specialty cupcakes has burst on to the scene. Sprinkles and Crave are two premier businesses that have helped to propel cupcakes into one of the decade's hot trends.

"The world’s first cupcake bakery,” Sprinkles started when Candance Nelson wanted to give the world a taste of natural homemade cupcakes. Not only did she create a booming business, but she also shot to fame as one of the judges on Food Network's Cupcake Wars. Cupcakes sell and the airwaves are filling up on the sweet fare. TLC's DC Cupcakes is a reality shows helping marketing the cupcake bakery industry. Everywhere you turn there are cupcakes.

How is it that our economy still weak from recession can support specialty cupcakes bakeries? These cupcakes are not cheap either. They start at $2.50 each. Most bakeries are so busy they have lines going out the shop and around the corner. But why cupcakes? A staple of kids' birthday parties. The answer may be their marketing plans to cater to individuals such as me who want the convenience to pick up a specialized, pretty to look at, uniquely tasty cupcake I can’t make at home.
